Catherine wanted to know how I made the Lime Cream Cheese Frosting for my vanilla cake. Here you are, Catherine:
Lime Cream Cheese Frosting
- 1 (8 oz.) package cream cheese, softened
- 4 TBSP softened butter
- 1 (1 lb. Box) confectioners sugar (4 cups?)
- zest from 1 lime
- 2 TBSP lime juice (or from 1 lime, whichever is less)
In a large mixing bowl, whip butter and cream cheese together with a hand-held mixer. Gradually beat in the confectioners sugar until thoroughly combined and smooth. Beat in the zest and juice.
Yield: enough to generously frost a 9 x 13 sheet cake, with extra leftover for a few cupcakes.
