Wonderful Wednesday Wrecipes

The cranberry boy brought home some product, hence the following:

Cranberry Nut Bread

  • 4 TBSP (1/2 stick) cold butter
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1-1/2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • ¾ cup orange juice
  • 1 TBSP minced or grated orange zest
  • 1 egg
  • 1 cup cranberries, coarsely chopped
  • ½ cup chopped walnuts

Preheat oven to 350 degrees, Grease a 9 x 5 inch bread pan with shortening.

In bowl of food processor, pulse together the dry ingredients 3 times.

Cut butter into small chunks and add to food processor. Pulse together with dry ingredients until pieces are no larger than a small pea, about 10 pulses. Remove mixture to large mixing bowl.

Beat together the orange juice, zest, and egg in a small bowl. Pour into flour/butter mixture, mixing just enough to moisten; do not beat and do not mix until batter is smooth.

Fold in cranberries and walnuts, then pour into prepared loaf pan. Bake about an hour or until bread is golden brown and toothpick inserted in center comes out clean. Cool in pan for 15 minutes, then turn out to slice & serve.

I was concerned it might be too tart, so I had to do some quality control, but the rest will come to stitching on Thursday night! (It was OK, if I DO say so myself!)
